Perched on the northern hillside of Antigua between Marble Hill and Blue Waters, the restaurant at Weatherills Rekindled occupies one of the most atmospheric dining settings on the island. The main wrap-around gallery of a carefully restored 17th-century colonial mansion serves as the dining room — a space where traditional louvred shutters, original timber flooring, and a never-ending Caribbean breeze create an ambience that is both charming and genuinely historic.
Cuisine and kitchen
The culinary programme is led by Executive Chef Andrew Baxter, whose modern international menu draws heavily on local Caribbean produce and ingredients. Dishes are crafted to offer sophisticated dining without sacrificing the relaxed, unhurried atmosphere that defines the property. The result is a menu that feels both refined and rooted in the island's culinary heritage.
Atmosphere and setting
The gallery wraps around the exterior of the 140-year-old great house, allowing diners to enjoy open views across the 40-acre grounds while remaining sheltered beneath the original roof structure. The combination of historic architecture, natural ventilation, and thoughtful interior details — including some of the property's original furnishings — makes for a wonderfully unique dining environment, quite unlike any other restaurant in Antigua.
